Apple & Cinnamon Vegan Overnight Oats

Good morning!

Yesterday my grandmother came to see me all afternoon and we had dinner at La Piazzetta together. I had a vegetarian Italian roll: a bite-size pizza roll with olives, pepper, onion, hot pepper, cheddar and mozzarella, served with sour cream. It was really good and quite big since I didn’t eat it all.

This morning I had vegan overnight oats! It’s been a long time since I ate some and they were perfect. My grandmother went for apple picking with my brother Sunday and brought me a bag. Guess what I used in my oats!

Apple & Cinnamon Vegan Overnight Oats

Ingredients:

  • 1/3 cup oats
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • 1 small to medium apple (I used McIntosh)
  • 1 cup milk (I used almond milk)
  • Maple syrup

Directions: In a small bowl, grate the apple using the coarse grater surface. Add all ingredients except the maple syrup and whisk for 30 sec-1 min. Put in the fridge overnight. In the morning, add enough milk to obtain desired consistency and drizzle with maple syrup.

They were really incredible!
