Reading, Always Reading

Good evening!

Yesterday, I has a social psychology class from 1 pm to 3 pm and I went to buy the book for this class after. I went to have dinner with Diran at Thai Express and we went at Starbucks and studied until 10! Sometimes I feel like I just pass all of my time reading ;).

This morning I overslept and woke up at 10:30! Looks like I needed some rest! I took my shower before eating breakfast and ended up eating at 11:30.

I had two whole-wheat waffles with warm shredded apples (put in a skillet over low heat until warm, add cinnamon if you want to) and maple syrup. It was out of this world!

I also made myself a cafe mocha. It’s been such a long time since I made one! And I make them delicious, so I have no reason to buy one for 5$!

Ingredients:

  • 3/4 cup hot milk (I used cow milk – for a non-dairy option, I suggest almond milk since it is creamier than other types of milk)
  • 2 espresso shots, or 1/2 cup very strong coffee
  • 1 tsp unrefined cane sugar
  • 1 tsp cocoa powder
  • 2-3 dashes cinnamon

Directions: Put all ingredients in a bowl and mix with a hand mixer (it makes it foamy). If you don’t have a hand mixer, use a whisk.
Serve in a cup with a dash cinnamon and a dash cocoa powder on top.

I then went for my statistics class at 1 pm. I ate about 2 ounces pistachios during the class, that ended at 4 pm.
I wasn’t feeling that well when I came home and I suspected hunger. I still decided to eat some soup before making dinner.

I love Health Valley‘s soup because it is no salt added. I still add a pinch of salt, but I prefer it to most canned soups that have an extra amount of sodium.

I ate half the can and made dinner about half an hour later.

Whole-wheat spaghetti with leftover Eden Organic Pizza-Pasta (from last week’s stuffed portabella pizza) sauce and melted cheese.
Hunger was definitely to blame!

Now I have some readings to do… at least 2-3 hours!
