Wasabi Sesame Soba Noodles with Edamame Beans

I was sitting in front of my computer, reading blogs.
Wondering what to eat for dinner that night. Without having to make a trip to the grocery store.
And without eating something boring like pasta with olive oil.

And then I stumbled on Shaheen’s soba noodle recipe. I just love soba noodles. And had everything to make the dish. It was a sign.

Wasabi Sesame Soba Noodles with Edamame Beans

Adaptation of Sesame Soba Noodle with edamame beans, Allotment 2 Kitchen

Ingredients:

  • 2 servings soba noodles
  • 1/2 tbsp tahini
  • 2 cloves garlic, pressed
  • 2 tbsp low sodium soy sauce
  • 2 tbsp oil, divided (I used grape seed)
  • 1/4 tsp wasabi
  • 1/8 cup water
  • 1 shallot, chopped
  • 1-2 carrot(s), cut into matchsticks
  • 1/2 cup frozen edamame, boiled for 4 minutes
  • 1 tbsp sesame seeds

Directions: Bring a pot of water to a boil and cook soba noodles according to package directions. Meanwhile, in a small bowl, whisk tahini, garlic, soy sauce, 1 tbsp oil, wasabi and water together. Don’t worry if it is still a little clumpy.
Heat remaining 1 tbsp oil in a wok over medium-high heat. Add the chopped shallot and cook, stirring, until it starts to brown. Add the carrot matchsticks and cook for 1-2 minutes, stirring. Add edamame and cook until warm and carrots are soft, then add the sauce.
When the noodles are ready, drain and add to the wok. Stir to coat well with the sauce and serve garnished with sesame seeds.


Serves 2

This dish was easy to make and delicious! The sauce is creamy and flavorful and the edamame adds a great little crunch. It is also very filling!
I used 1 carrot but I’d use 2 next time since I thought it could have more.

    Oh, I so miss noodles. There aren't any REALLY good low carb noodles. These look so tasty, I just want to eat them all. Buzzed!
