I love lemon. In fact, I love everything that is sour. I liked lemon so much when I was young, I ate lemon slices!
I decided to make lemon poppy seed bread after buying a slice at Starbucks. The bread slice I bought was good, but too dry (I like my sweet bread moist!) and too sweet.
So I went through some recipes and decided to go with a glazed bread. And since I had pomegranate juice on hand, I thought I’d try the lemon-pomegranate combo!
Adaptation of Glazed Lemon Bread, Simply Recipes
Ingredients:
- 1/2 cup earth balance (or butter), softened
- 3/4 cup golden cane sugar
- 1 tbsp agave nectar
- 2 flax eggs, divided
- 1/2 cup milk (I used unsweetened almond milk)
- Zest of 1 lemon
- 1/2 tsp lemon extract
- 1/2 tsp fine sea salt
- 3/4 cup unbleached all purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 3 tbsp poppy seeds
Glaze:
- 1/4 cup POM wonderful pomegranate juice
- 1/4 cup golden cane sugar
- 1 tbsp agave nectar
Directions: Preheat oven to 350°F and grease a 4×8-inch bread pan. Prepare flax eggs: in a small bowl, mix 1 tbsp flax seeds, grounded, and 3 tbsp water. Repeat to have two divided flax eggs and set aside.
In a bowl, combine flours, salt and baking powder with a whisk.
Beat earth balance with a hand mixer until fluffy, about 1-2 minutes. Add sugar and agave, continue to beat until creamy. Add flax eggs, one at a time, beating after each addition to incorporate. On low speed, slowly beat in the milk, then mix in lemon zest and extract. Slowly add in dry ingredients and beat until smooth. Place the batter in the prepared pan and bake for 1 hour.
While the bread is baking, prepare the glaze: place all the glaze ingredients in a small saucepan and heat on low until sugar is completely dissolved.
When you remove the bread from the oven, poke holes all over the top with a toothpick. Spoon the glaze over the bread while it is still hot and in the pan. Let cool for 10 minutes before removing from the pan.
Makes 1 bread.
This bread was amazing! The sweet lemon flavor went very well with the subtle pomegranate from the glaze. Make sure you can wash your hands after, because this bread is sticky!!!

I do love lemon…especially when the weather gets hot. Lemon poppy seed sounds delicious. Pom glaze sounds like an interesting final touch.
