I never knew monster cookies existed until I saw them on Busy but Healthy.
These cookies are genius. They have all the yummy cookie add-ins you can think of.
I googled the yummy goodies and all the recipes I saw had M & M’s, chocolate chips and oats but the rest of the ingredients changed.
And so I looked for more monster cookie recipes until I found one that I could work with.
Adaptation of Monster Cookies, The Pioneer Woman
Ingredients:
- 1/2 cup earth balance (or butter), at room temperature
- 1/4 cup golden cane sugar
- 1/2 cup packed brown sugar
- 1/4 cup unsweetened applesauce
- 1 tsp pure vanilla extract
- 1/2 cup unbleached all purpose flour
- 1/4 cup spelt flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp fine sea salt
- 3/4 cup rolled oats
- 1/4 cup milk chocolate M & M’s
- 1/4 cup pretzel M & M’s, coarsely chopped
- 1/4 cup peanut butter chips
- 1/4 sup semisweet chocolate chips
- 1/8 cup raisins
- 1/8 cup chopped walnuts
- 1 cup brown rice crisp cereal
Directions: Preheat oven to 375°F and line a baking sheet with parchment paper. In a large bowl, beat earth balance and sugars with a hand mixer until fluffy. Beat in applesauce, then vanilla.
In a second bowl, mix flours, baking powder, baking soda and salt with a whisk. Gradually add to the wet ingredients and mix until combined. Stir in rolled oats, M & M’s, PB chips, chocolate chips, raisins and walnuts with a wooden spoon. Carefully stir in rice crisp cereal.
Scoop 2 tbsp balls of dough on the baking sheet. Bake for 10-15 minutes, until golden.
Note: If making these cookies with a stand mixer, you can add the add-ins to the mixer bowl but stir in the rice crisp cereal with a wooden spoon so they don’t get crushed. Mine didn’t get crushed at all!
Makes 16-20 cookies

Well, I present to you the chewy-crunchy cookie!
The dough of these cookies is perfect & chewy, but thanks to the rice cereal, the cookies are ALSO crunchy! And it was a-w-e-s-o-m-e.
These were so good. It was like each bite had a different delicious taste :-).
I wish there was some left because writing this makes me want more!

ah HA!!! One of my first posts was about Monster Cookies and I thought maybe I was crazy to think that a Monster Cookie was a cookie that had candy bits in it. I started to doubt myself and think Monster just meant BIG. You have set me back on the right path with this post. Yeah!
