Easy Mango & Green Pea Rice

Good morning!

With four exams this week, I knew my kitchen would not see me a lot. So I decided to keep a recipe I made last week to post during my exams.
And I didn’t even have enough time to write a blog post.

Now my exams are over (and went well!) and I get to share with you a delicious easy healthy recipe!

Easy Mango & Green Pea Rice

Adaptation of Riz à la mangue et aux petits pois, Banlieusardises

Ingredients:

  • 1 cup brown rice (uncooked) or 3 cups cooked
  • 1 tbsp coconut oil
  • 2 cloves garlic, minced
  • 1 dry shallot, thinly sliced
  • 1 1/2 cups frozen mango
  • 1 1/2 cups frozen green peas
  • 1-2 tbsp low sodium soy sauce (or tamari, or coconut aminos)

Directions: Cook brown rice according to package directions.
In a wok or a big skillet, heat oil over medium-low heat. Add garlic and shallot and cook for 30 sec – 1 min, stirring continuously. Add cooked brown rice, frozen green peas and frozen mango and stir. Cook for 10-12 minutes, stirring frequently, until mango is totally unfrozen. Add soy sauce, stir and serve.

Serves 3-4 as a main dish.

I absolutely love this rice! And it is so easy to make, I’ll definitely make it again!
It is very filling. The green peas stay a little crunchy and the mango gave a little something to a simple dish! And I love colorful plates ;-).
