Coconut Mint Strawberry Smoothie

I don’t drink a lot of smoothies in the winter. When I make one, it is usually for breakfast and, in the morning, the cold weather makes me crave oatmeal more than a cold drink.

I’ve been feeling dehydrated since the winter began and I ended up craving a delicious smoothie as an afternoon snack. I might end up braving the cold often for this one.

Coconut Mint Strawberry Smoothie

Ingredients:

  • 3/4 cup chilled full fat coconut milk
  • 1/2 cup almond milk
  • 1/2 tsp maple syrup
  • 10 fresh mint leaves
  • 1 cup frozen strawberries (I used sliced – with whole strawberries, use 1 heaping cup)

Directions: Put all ingredients (in order) in the blender and process until smooth.

Makes 1 serving

The key ingredient in this smoothie is actually the maple syrup! At first, I made it without the syrup and it wasn’t really good. Adding the maple syrup brought it from not good to delicious – it made all the flavors burst!

It also had the perfect thickness thanks to the chilled coconut milk (really thick).
Now I have to study for my exam tomorrow! Only two days left – can’t wait!

    Yum! I drink almost exactly the same smoothie when I get back from my tai-chi-yoga-pilates class! I love using coconut milk in my smoothies!
