Stove Top Oatmeal & More

Good evening!

This morning’s breakfast was stove top oatmeal. With the weather getting colder, I’m realizing how much I love these!

1/3 cup oats, 2/3 cup water, vanilla, cinnamon & raisins. + a little bit of earth balance & a sprinkle of brown sugar on top!

I used to make plain oatmeal and add fruits/nuts/spices after. Today I decided to add everything to the pot at the beginning (I don’t use quick oats so it has more time to cook). The oatmeal had more flavor and the raisins got hot, sweet and delicious :). Definitely doing this from now on!

I had class and after I needed a quick lunch so I could go study. Leftover Three Been Chili was perfect!

I studied until 7:30 pm and needed a quick dinner too because I was starving!
So I made something I wanted to do for some time now.
Caitlin’ Sweet Potato and Baked Beans! I bought baked beans last week just to make this ;).

It was absolutely delicious! It is a perfect rapid, easy meal. Faster than fast food!
When I saw this for the first time, I thought it was weird but the flavors go perfectly together (I used tomato sauce baked beans).

Going in my kitchen to bake now! Hope I’ll have a recipe to share tomorrow ;).
