Butternut Squash Once, Butternut Squash Twice

Good evening!

I was late this morning so I had to bring breakfast with me.

I had an Earth Balance & raspberry jam sandwich and 2 clementines.
2 Vegan Dark Chocolate & Pear Cookies were for snack!

When I came home at noon, I had two Sprouted Spring Rolls (no dip or peanut butter).

And half an hour later, I had butternut squash in pasta gratin form.

I didn’t do much this afternoon and ate dinner at about 5 pm.
And it was one of my favorites: half a butternut squash baked with olive oil, salt and pepper!

I call this a butternut squash day!

I went at Starbucks to study and had a Gingerbread latte. It was my first and I like it even more than Pumpkin Spice!
I finally didn’t study. I went at 6:30 and Diran finished his voluntary work early (6:45 instead of 9:00) and I was going at his place with him.

I’ll study this weekend and Sunday I’m making food :). I’ll share a recipe then and Monday I’ll share Sunday’s breakfast – my Macaroon Monday entry! It’s a surprise ;).

    The butternut squash in gratin form looks really comforting and so seasonal. It certainly is the time to enjoy pumpkin and squashes!

    So, that butternut squash pasta dish you have going on there looks AMAZING!!! What is that spinach, cheese, squash and sauce? Yum!
