Zesty Raisin Muffins

Good morning!

For this morning’s breakfast I wanted to make muffins. Without fresh fruit because I don’t have any (how did this happen?).
But I did have dried fruit and fruit juice…

Zesty Raisin Muffins

Adaptation of Orange Raisin Muffins on allrecipes

Ingredients:

  • 1 cup kamut flour
  • 3/4 cup all-purpose flour
  • 3 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1/4 cup unrefined cane sugar
  • 1 flax egg: whisk 1 tbsp flax seeds, grounded, and 3 tbsp water and set aside
  • Zest of 1 small lemon
  • 1/4 cup pure grapefruit juice
  • 1/2 cup milk (I used almond milk)
  • 1/3 cup safflower oil
  • 1/2 cup raisins

Directions:  Preheat oven to 400°F and line a muffin tin with baking cups. In a bowl, mix flours, baking powder, salt and sugar. In a second bowl, whisk zest, juice, milk and oil. Add dry to wet ingredients and mix just until moistened. Fold in raisins and spoon batter in baking cups. Bake for 20-25 minutes, until a toothpick comes out clean from the center.

Makes 12 muffins

Nutrition facts (1 muffin): 159 calories, 61 calories from fat, 7g total fat, 0g trans fat, 0g saturated fat, 0mg cholesterol, 59mg sodium, 22g carbohydrates, 1g fiber, 7g sugars, 3g protein

These are quite tasty! The lemon zest & grapefruit juice are not overpowering – just enough to make them… zesty! 😉
