I’m Back with Waffles

Good evening!

This week, I had four midterm exams in four days and didn’t have time for anything besides studying. I didn’t blog. And I made only 1/3 of my meals.
Friday, I was exhausted – sleeping only 4 hours a night was hard on me. I regained my energy over the weekend!

Yesterday I went at Walmart and found a waffle maker for 10$! I’ve been looking for one for a long time but most are quite expensive. So when Diran and I woke up (at 12:20 pm)… I made us waffles!

And they were delicious. Crisp outside & fluffy inside is what I was looking for – and it is what I got!

Good for You Homemade Waffles

Adaptation of Whole Grain Waffles on allrecipes

Ingredients:

  • 1 cup whole wheat pastry flour
  • 1/4 cup spelt flour
  • 1/4 cup wheat germ
  • 3 tbsp flax seeds, grounded
  • 4 tsp baking powder
  • 2 tbsp unrefined cane sugar
  • 1 tsp ground cinnamon
  • 1/8 tsp fine sea salt
  • 2 eggs
  • 1 3/4 cup milk
  • 1/4 cup safflower oil
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp vanilla extract

Directions: In a bowl, mix dry ingredients (flours, wheat germ, grounded flax seeds, baking powder, sugar, cinnamon and salt). In a second bowl, whisk eggs until fluffy. Add milk, oil, applesauce and vanilla extract and whisk until combined. Add dry ingredients and whisk until batter is smooth.
Now preheat waffle iron (not before – the batter needs time to thicken – 10 minutes is perfect). Cook in batches until golden brown.

Makes 10 Belgian-sized waffles
If you don’t use all the batter, it can be kept in the fridge.

Diran ate wheat germ and flax seeds without even noticing it ;).

    I love good for you food! This recipe sounds great! I usually buy Uncle Bob's healthy 10 grain pancake and waffle mix…But why not make my own?! Thank you for this recipe!!!
