A Gift for my Grandmother

Good afternoon!

Finally it is Friday! Even though I’m going to pass all weekend studying, I’m relieved the week is over.

This morning’s breakfast was two Apple Muffins.

I also had jasmine pearls tea.

I had a class until 11:30 am and when I came home, I made lunch…

A-little-burned crispy pan-fried tofu. It didn’t taste burned so it was still tasty. Dipped in BBQ sauce!
And baked sweet potato. It was simple but delicious!

I made the tofu using Emily’s stovetop method.
I had baked tofu before but I’ve never made it on the stovetop. And I love both!

My grandmother was coming to see me with my brother this afternoon and I decided to make her a little gift…

Homemade Pumpkin Butter

Adaptation of Happy Thanksgiving Homemade Pumpkin Butter, Oh She Glows

Ingredients:

  • 1 can (798ml) pumpkin puree
  • 3/4 cup water
  • 1/4 cup unsweetened applesauce
  • 1 cup maple sugar (or unrefined cane sugar)
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 2 1/2 tbsp lemon juice

Directions: In a large saucepan, combine pumpkin, water, applesauce, sugar and spices. Bring to a boil, reduce heat to low, cover and simmer for 30 minutes, until thickened. Stir frequently. Remove from heat, adjust spices to taste and stir in lemon juice. Let cool, then put in a container, in the fridge.

My brother ate it by the spoonful! I thought he wouldn’t like it because it is quite spicy but I was wrong!

The maple sugar jar was empty…

And so it became a pumpkin butter jar!

*Beurre de citrouille = Pumpkin butter in french.

My grandmother was very happy! She didn’t expect to get a gift ;).
I’ll relax a little this afternoon and after dinner I have readings to do!
