This morning, I had my class on infants and children. The teacher covered biological basics that I already knew so I really didn’t learn much.
I then posted my Amazing Meal review and had lunch:
Last night I cooked too much spaghetti so I had the leftovers with a drizzle of olive oil, a small slice of soft goat cheese, salt and pepper – served on a bed of spinach!
I really didn’t sleep well last night. Some people were having a party and making too much noise and I finally was able to sleep at about 2 am because I was too tired for the noise to disturb me. I had about 5 hours of sleep and was so tired that I decided to take a nap… to finally end up sleeping for a solid 2 hours.
I have a difficult time adjusting my sleeping habits with my new school schedule this year. The fact that I’m beginning at 1 pm half of the week certainly doesn’t help either.
I was hungry and didn’t feel like cooking so I went at Sushi Shop with Diran. I had a miso soup, vegetarian spring roll and avocado roll.
I read blogs and took it easy tonight. I also had a wonderful snack:

Ingredients:
- 1 small to medium apple
- 1/8 tsp grated ginger root
- 1/4 tsp ground cinnamon, or to taste
- 1 tbsp sliced almonds
- 1-2 pinch(es) flax seeds
- 1 slice whole wheat bread
Directions: Peel the apple (and eat the peels – full of nutrients). Using the large grating surface, grate the apple directly in a skillet. Toast the bread. Meanwhile, add the grated ginger and the cinnamon to the apple and place over low heat. Toss and heat until warm (you don’t want to cook it!). Place on the toasted bread, cover with sliced almonds and sprinkle with flax seeds.
Serves 1
The ginger makes it really spicy. If you don’t want to taste the ginger too much, add just a pinch.
It tastes amazing and it is a healthy, simple snack:
And makes some diversity. I think that it is harder to find diversity in healthy snacks than for meals. Maybe you could double it and make it into a breakfast too!
