I love it so much that tonight’s dinner was:
Half a butternut squash!
I came home from school, took the leftover half of squash from my curried stew, brushed it with olive oil, put in in the oven for an hour, sprinkled it with salt and pepper, sat down and ate it.
SO good. Butternut squash was created to make me happy!
I then went at Starbucks and studied for 4 hours since I was a little late in my readings (weekend in the country and funerals 2 days later!).
I’m waiting on my breakfast, which is in the oven, before going to sleep. I’ll give you the recipe tomorrow, but I’ll still give you a hint: I had canned pumpkin and fresh cranberries in the fridge!
