Work Night

I worked from 4 pm to 9:15 pm. There was not that much people at the supermarket but it was still occupied enough to drain my energy. Coming home at 10:30 pm doesn’t help either!

When we work at night, we only have a 15 min break so I have to bring an easy-to-eat-in-15-minutes lunch ;). Tonight I had multigrain fusilli with primavera sauce.

It was quite cold outside when I got out so I bought a hot chocolate to warm me up. I didn’t drink it all but it was nice to have something hot in my hands while waiting for the bus to arrive.

At home, I had Brussels Sprouts!

Brussels Sprouts in Dijon Mustard Sauce

Adaptation of a recipe on Shape Magazine’s Website

Ingredients:

  • 8-10 Brussels sprouts
  • 1 tbsp olive oil
  • 1/2 cup + 3 tbsp water, divided
  • 1/3 cup Dijon mustard
  • 1 tsp brown sugar
  • 1/2 tsp Worcestershire sauce
  • Salt, pepper

Directions: Heat a skillet over medium heat. Add olive oil and spread to coat the bottom. Add Brussels sprouts and 3 tbsp water, stir, cover and reduce to med-low heat. Cook for 5 minutes.
Meanwhile, whisk together 1/2 cup water, mustard, brown sugar, Worcestershire sauce and 5 grinds pepper. When sprouts have been cooking for 5 minutes, add the sauce, stir, cover and cook for another 5 minutes.
Remove from heat, drain and serve with salt and pepper to taste.

It was really good! I had a craving for Brussels sprouts for days!
