Blueberry and Flax Vegan Overnight Oats

This morning I had vegan overnight oats. I habitually make them with chia seeds but didn’t have any left so I used flax instead.

Blueberry and Flax Vegan Overnight Oats

Ingredients:

  • 1/3 cup rolled oats
  • 2 tbsp flax seeds
  • 2-3 dashes cinnamon
  • 1 cup milk (I used unsweetened almond milk)
  • 1 tsp maple syrup & more to drizzle
  • 3/4 cup blueberries (I used wild blueberries)
  • Sliced almonds to garnish

Directions:
In a bowl, put oats, flax seeds, cinnamon, milk and maple syrup. Whisk well for 30 sec – 1 min. Add blueberries and put in the fridge overnight. Remove from fridge and, if the oats are too liquid for your taste, use a fine strainer to get rid of some milk. Garnish with sliced almonds and drizzle with maple syrup.

The nutty flavor of flax was actually perfect with the blueberries! It didn’t absorb as much liquid as chia seeds do so I had to strain my oats. I like them very thick!
