After rainy May came sunny June.
And sunny June made smoothies into a daily treat, which are made the same way every day… except when yummy ideas come my way. (wow… I should be a poet)
I actually wanted to make a banana smoothie…
until I saw the bottle of POM in the fridge
as well as the leftover coconut milk I had from making Angela’s delicious cucumber salad.
And a simple banana smoothie turned into a refreshing, flavorful smoothie.
Ingredients:
- 1/2 cup POM wonderful pomegranate juice
- 1/3 cup chilled full fat coconut milk
- 1 tbsp chia seeds
- 1/4 tsp pure vanilla extract
- Pinch ground cardamom (optional)
- 1 frozen banana
- Cocoa powder & cacao nibs, to garnish
Directions: Put all ingredients in a blender in the order listed and process until smooth. Pour in a glass and garnish with cocoa powder and cacao nibs.
Serves 1
This smoothie was a wonderful healthy treat. The balance between the banana and pomegranate is perfect, with a light coconut aftertaste. I loved the cacao nibs that gave a little crunch and great flavor to some sips!
