I used to hate tofu.
Until I learned that tofu is good if you make it good.
It is the type of food you need to learn how to prepare in order to like it. Give me a piece of tofu and I still hate it. Give me a great tofu recipe and I love it.
The first time I ate tofu and loved it was when my grandmother made me a marinated soft tofu. It was marinated in soy sauce and olive oil and it was delicious!
The first time I made tofu and loved it was when I made Caitlin’s Perfect Baked Tofu. Then when I made Emily’s pan-fried tofu.
And then I became more adventurous and made a tofu stir-fry. And it was the most delicious stir-fry, and the most delicious tofu, I ever ate.
Adaptation of Tofu sauté au brocoli, Coup de Pouce
Ingredients:
- 1 tbsp coconut oil
- 1 pkg (350 g) extra firm tofu
- 2 green onions, chopped
- 3 cloves garlic, pressed
- 3 cups frozen broccoli
- 1 bell pepper, sliced
- 5-10 green beans, chopped in 1 to 1 1/2 inch pieces
- Chopped peanuts & fresh cilantro, to garnish
Peanut butter sauce:
- 1/2 cup water
- 1/4 cup natural smooth peanut butter
- 2 tbsp apple cider vinegar
- 1 tbsp low sodium soy sauce or tamari
- 1 tsp maple syrup
- 1/4 tsp tabasco
- Pinch garlic powder
Directions: Wrap the tofu in a towel and place under a heavy book to press for 10-15 minutes. Meanwhile, prepare the peanut butter sauce by whisking all ingredients together in a small bowl. When the tofu is ready, cut in 1 inch cubes.
Heat the coconut oil in a wok over medium-high heat. Add tofu, green onion and garlic and stir-fry for 3 minutes, until tofu is golden. Add broccoli, bell pepper and green beans and stir-fry for 2-3 minutes. Add peanut butter sauce, and cook, stirring, until broccoli is completely unfrozen.
Serve garnished with chopped peanuts and cilantro.
Serves 4
This was an amazing dish. The peanut butter sauce is delicious, the veggies are still crunchy, except for the broccoli that gets mushy but I love it that way. If you want to use fresh broccoli, add a tbsp water 1 minute after adding it.
The tofu melts in your mouth and has a delicious peanut butter sauce taste. I love peanut butter sauce. Everything is delicious in a good peanut butter sauce.
And I also learned that a stir-fry is a perfect meal during final exams. It takes 15 minutes to make!
