Warm weather made me dream of summer.
Then came snow. It is horrible when there is a snowfall warning after a week of warm sunny spring weather. Because you thought summer was coming. The birds were even singing. And then you wake up to snow.
What can you do? Nothing.
Besides baking something with summer flavors, of course!
Adaptation of Strawberry Muffins, allrecipes
Ingredients:
- 1 cup spelt flour
- 3/4 cup unbleached all-purpose flour
- 1/2 cup unrefined cane sugar
- 2 tsp baking powder
- 1/4 tsp fine sea salt
- 1/4 cup safflower oil
- 1/2 cup milk (I used unsweetened almond milk)
- 1 flax egg (mix 1 tbsp flax seeds, grounded, with 3 tbsp water)
- 1 tsp vanilla extract
- 2 kiwis, peeled and chopped
- 1/2 cup chopped strawberries
- Turbinado sugar, to sprinkle on top
Directions: Preheat oven to 350°F. Prepare flax egg and set aside. Line a muffin tin with 12 muffin cups.
In a large bowl, mix flours, sugar, baking powder and salt. In a second bowl, whisk oil, milk, flax egg and vanilla.
Add strawberries and kiwis in dry ingredients and toss to coat with flour. Add wet ingredients and mix with a wooden spoon until incorporated. The batter is thick and sticky.
Fill muffin cups 3/4 full. Sprinkle with turbinado sugar. Bake for 25 minutes, or until a toothpick comes out clean. Cool 10 minutes before removing from pan.
Makes 12 muffins
These muffins are dense and crumbly. They are not too sweet and have lots of chunks of juicy fruit (yum). The turbinado sugar makes a great crunchy topping.
Now close your eyes, forget about the snow and dream about a warm sunny day.
P.S. If you have warm sunny days where you live… I’m jealous.
