Final exams are beginning this week. And I have a cold. Bad moment to be sick!
This morning, I was trying to study at the library but it wasn’t working so I went back home and relaxed with soup. It really helped and now I have enough energy to study a little :).
I made Diran and I a salad for dinner since we were going to the library all day. I ended up going back home but I went back to the library so I could study and ate with him. I didn’t eat much since my belly was full of soup but it was delicious!
Ingredients:
- 2 cups uncooked brown basmati rice
- 3/4 cup slivered almonds
- 1/2 cup pepitas (pumpkin seeds)
- 1/4 cup sunflower seeds
- 1 small bunch coriander, ciseled
Dressing:
- 4 tbsp extra virgin olive oil
- Juice of 1 lemon
- Zest and juice of 1 lime
- Salt, pepper to taste
Directions: Cook rice according to package instructions. Once cooked, transfer to a bowl to cool.
Prepare the dressing by mixing all ingredients together with a whisk. Pour on the rice and toss well. Add all other ingredients and toss again.
Makes 6 servings
I loved the crunch of the almonds and seeds combined with the rice. The subtle taste of the lime & lemon juices give the salad a really nice flavor.

This salad sounds delicious! I love the addition of the seeds and nuts, I imagine they would give the salad a nice crunch and flavor along with the citrus!

Good luck on finals đŸ™‚ I always hated them, but loved the feeling of the end of the semester being so close. This rice salad looks delicious!
