Yesterday, I was trying to find something I could make for Diran and I today.
Blank.
Nothing.
I looked in my bookmarked recipes.
I looked in my cookbooks.
And there wasn’t anything I wanted to make us.
Of course, once I wasn’t trying to find something, I had an idea.
While thinking of the feta in my fridge.
And how long it’s been since I’ve made Greek salad.
But I wasn’t feeling salad.
Instead, I was inspired to make this:
Yes, pizza.
Diran was coming at 1 PM for lunch.
So at 12:30, I went in the kitchen and got to work.
Ingredients:
- 2 thin whole-wheat pizza crusts OR 2 whole-wheat medium pita breads
- 4 tbsp pesto (homemade or store-bought)
- 1/2 red onion, sliced
- 1 tomato, seeds removed, diced
- 4 Kalamata olives, chopped
- 1/4 cup feta
- Parmesan (approx. 2-3 tbsp grated)
- 1/2 tsp dried oregano leaves
- Freshly ground black pepper
Directions: Preheat oven to 425°F. Line baking sheet with parchment paper and place crusts on it.
Spread 2 tbsp pesto on each crust and top with sliced onion. Add tomato, chopped olives and feta. Grate Parmesan on top. Sprinkle with oregano and black pepper. Bake for 15 minutes.
Makes 2 small pizzas.
Serves 2 alone – 4 with side dish.
I expected this pizza to be good.
But not this good.
I don’t want to brag – this is an incredible pizza.
Enough for my boyfriend to say I could sell it.
I decided I prefer sharing it with you ;-).
