Tofu Fingers

Good evening!

A couple of days ago, I had a rare craving. A craving for something with meat. A craving for chicken fingers. Of course, I wasn’t going to respond to that craving. Not with meat, anyway.

So what does a vegetarian do when a chicken fingers craving strikes? There are two options:

  1. Suffer.
  2. Invent a yummy meat free fingers recipe.

Of course, I wasn’t going to choose option one! Making meat free fingers is only a nice little challenge :).

At first, I wanted to make fingers the same way you would with chicken, only with tofu: dip in egg, then in bread crumbs.
But this was a boring challenge. So I decided to make vegan tofu fingers. And today for lunch, I ate yummy tofu fingers:

Easy Dijon Tofu Fingers

Ingredients:

  • 1/3 block extra firm tofu
  • 1 heaping tbsp Dijon mustard
  • 1 slice whole-wheat bread, dried and processed into bread crumbs OR 1/4 cup store bought bread crumbs

Directions: Place tofu in an absorbent clean kitchen towel and place under a heavy book for 15 minutes. Slice into long rectangles.
Preheat oven to 400°F. Line a baking sheet with parchment paper. Use the back of a spoon to coat a tofu piece with Dijon mustard, then roll the tofu in the bread crumbs. Place on baking sheet and repeat with remaining tofu. Bake for 30 minutes, turning once.

Serves 1
Adapt ingredients to number of people eating this yummy meal!

Serve with your favorite dipping sauce (BBQ sauce is great)!

These really surprised me. They may be even better than chicken fingers! I’m proud of myself ;).

    These are so much better than any chicken in my opinion ;)! I bet the dijon added some extra good flavor as well, great recipe!
