Banana Split Baked Oats

Good morning!

My love for baked oats was revived yesterday and I had to eat some again today! I can’t eat this breakfast when I have school in the morning so I knew that it was today or I’d have to wait until the weekend!

Banana Split Baked Oats

Ingredients:

  • 1/3 cup oats
  • 1 tsp chia seeds
  • 1 tsp chopped walnuts
  • 2-3 strawberries, sliced
  • 2/3 cup milk (I used almond milk)
  • 1/2 tsp maple syrup + more to drizzle
  • 1 small banana, sliced lengthwise
  • Dash cocoa powder

Directions: Preheat oven to 400°F. Combine oats, chia seeds, walnuts, strawberries, milk and maple syrup in a small oven-safe dish. Place the banana on top and sprinkle with cocoa powder. Bake for 40-50 minutes, until golden brown. Drizzle with maple syrup and serve.

Nutrition facts: 389 calories, 80 calories from fat, 9 g fat, 1 g saturated fat, 0 g trans fat, 0 mg cholesterol, 123 mg sodium, 69 g carbohydrates, 11 g fiber, 19 g sugars, 12 g protein – 1 % vitamin A, 28% vitamin C, 20% calcium, 18% iron

This was a delicious breakfast, and a great start to my day.
