Angela’s Stuffed Portabella Pizza

Greetings!

After lunch, I went at the bank but there was too much people and I didn’t feel like waiting. I ten went at the grocery store to buy what I needed to make Diran and I a special dinner.

Diran came to my apartment at 5 pm and I made us a snack/appetizer.

We talked in bed while eating pink tomatoes with mozzarella! When I came with the plate, Diran told me that he wanted to ask me to make this but decided to let me make what I wanted!

We relaxed together and we ate dinner at a 8 pm, which is late for me since I never eat later than 6!
Angela at Oh She Glows submitted a recipe for the Mushroom Masters: A Tournament of Taste – Easy Stuffed Portabella Pizza in a Cashew Basil Cheese Sauce. I loved the idea of making a pizza in a Portabella mushroom and decided to use the idea:

 
Stuffed Portabella Three-Cheese Pizza with Basil Leaf

Inspired by Stuffed Portabella Pizza in a Cashew Basil Cheese Sauce

Ingredients

  • 4 Portabella mushrooms
  • 398ml can of pizza sauce (I use Eden Organic pizza-pasta sauce)
  • 1/2 small red onion, diced
  • 4 tbsp grated Romano cheese
  • 4 tbsp grated mozzarella cheese
  • 4 slices soft goat cheese
  • 4 basil leaves
  • Freshly ground pepper to taste

Directions: Preheat oven at 375°F and cover a baking sheet with parchment paper. Remove stems of Portabellas and gently clean them with a damp cloth. Place them stem-side up on the baking sheet. Fill the cavity with pizza sauce (2-3 tbsp). Sprinkle red onion, 1 tbsp Romano and 1 tbsp Mozzarella on each Portabella. Put one goat cheese slice on top of each, sprinkle with pepper and bake for about 15 minutes, until cheese is melted and the goat cheese starts to brown. Add the basil leaf and bake for one more minute.

Makes 4 Portabella pizzas

It was absolutely delicious. I made 2 for each of us but Diran ate one and a half and I ate one + the goat cheese on the second. I would recommend serving one pizza per person with a light side dish or appetizer.

Now I’m going to watch Gossip Girl and go to bead. Tomorrow morning, I’m going to eat breakfast at Starbucks and do half of my readings. I’m doing the rest on Sunday morning.
