Tortellini Night

Good evening!

I finally decided to just rest and do nothing all day and reported the housework for tomorrow. Since I only had two days left before school, one of them had to be dedicated to just sitting and watching season 3 of Gossip Girl (that I just bought)!

For lunch, I had couscous with strained tomatoes, primavera sauce and parsley flakes along with some veggies.

It was easy to make, healthy and delicious!

Diran had his first day back to school today and he came to eat dinner at my place since it is on the campus. I made tortellini with a pink sauce (not an everyday treat!).

Please don’t think I ate all this! It is actually the whole thing in a serving bowl!! We just served ourselves at the table.

Heirloom Tomato Creamy Pink Pasta Sauce

Ingredients:

  • 1 big heirloom tomato, cut in very small pieces
  • 1 cup country-style 35% M.F. cream
  • 2 tbsp tomato paste
  • 1/4 cup Romano or Parmigiano, grated
  • 1/8 tsp oregano
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • Salt, pepper to taste

Directions:  Put all ingredients in a skillet over medium-low heat. Cook, stirring often, for 15 to 20 minutes. If it starts to boil, reduce heat to low. Serve over your choice of pasta.

Makes 3-4 servings.

This was so good! It actually was the first time I made a pink sauce all by myself (meaning without my mother telling me what to do).

Tonight I’ll do a little cutting for my collage. I won’t be able to finish it before Wednesday like I hoped to, but I can still do as much as I can!
