I saw edamame hummus a couple times before finally making some.
When I finally made it, the first thing I learned is that it has a much lighter taste than chickpea hummus. And when I tried it with my favorite hummus crackers, which are made of flax seeds, it wasn’t good. The flax seeds tasted way too much and overpowered the light edamame taste.
And then I found the perfect light-tasting veggie: endives. Their taste goes so well with the edamame! And what an easy beautiful presentation if you have guests!
Ingredients:
- 1 1/4 cup frozen edamame
- 1 clove garlic
- 1 tbsp tahini
- 1 tbsp lemon juice
- 3 tbsp water
- 6-8 drops tabasco
- 1/4 tsp salt
- 2 endives
- 2-3 tsp olive oil
- Paprika
Directions: Boil edamame for 4 minutes and drain. Process 1 cup edamame with all the other ingredients except oil and paprika until smooth. Take one endive leaf and spoon some hummus in the middle. Garnish with a sprinkle of paprika, a couple drops of olive oil and one soybean. Repeat until all the hummus is used.
Makes about 1/2 cup hummus
