Yes, an other granola recipe. And you’ll probably see a lot more!
Why? Because I love granola, of course.
But I think it is worse than that. I am probably a granola addict. Is that a bad thing?
So how did I have the idea to make this granola?
I really wanted to make a berry granola.
And then I saw the poppy seeds in my pantry.
And then I decided to make it a blueberry poppy seed granola.
No long story here!
Ingredients:
- 2 1/2 cup rolled oats
- 1 cup brown rice crisp cereal
- 1/2 cup poppy seeds
- 1/4 cups wheat germ
- 2 tbsp flax seeds, grounded
- 1/2 cup honey
- 1 tbsp virgin coconut oil, melted
- 2 tbsp blueberry jam (choose a liquid jam, not a jelly)
- 3/4 cup dried blueberries
Directions: Preheat oven to 325°F and line a baking sheet with parchment paper. In a large bowl, mix oats, rice cereal, poppy seeds, wheat germ and ground flax. In a small bowl, whisk honey, melted coconut oil and jam. Pour on the dry ingredients and toss until well coated. Spread on the baking sheet and bake for 15-20 minutes, stirring once or twice. Let cool completely on the baking sheet, transfer to a bowl and stir in dried blueberries. Store in an air-tight container.
Makes 6 cups
This granola makes small crunchy clusters and it was SO good! It has a sweet nutty taste thanks to the large amount of poppy seeds and the dried blueberries were perfect to go with it.
Made my addiction worse :P.
