Grilled Goat Cheese & Mushroom Sandwich

There are some foods I used to hate that I learned to love.
I used to hate avocado and sweet potatoes. Now I can’t live without them.

There are also some foods that I loved. And when I eat them now, I find them disgusting.
This happened with kraft dinner. As a teenager, I loved it. And I made it a couple months ago and couldn’t even eat it. But I discovered Annie’s mac & cheese – much better.

It also happened with grilled cheese sandwiches. You know, the kind with orange slices of kraft cheese. It seems like I have lost my love for “fake” cheese.
This meant I’d have to make better grilled cheese sandwiches. But there was one thing I wanted to keep from the old grilled cheese sandwich: it takes 5 minutes to make!

Grilled Goat Cheese & Mushroom Sandwich

Print recipe

Ingredients:

  • 2 slices of bread
  • 1-inch piece of goat cheese log
  • 2 cremini mushrooms, sliced
  • 1/2 tsp chopped fresh thyme
  • Earth Balance or butter

Directions: Spread the goat cheese on one slice of bread. Sprinkle with chopped fresh thyme, then add  sliced mushrooms. Top with the second slice of bread.
Heat a skillet over medium-low heat. Spread earth balance or butter on the outsides of the sandwich. Place the sandwich on the heated skillet (start with the side with the goat cheese on the bread). Press the sandwich with a spatula and cook until golden. Turn the sandwich, press with the spatula and cook until the second side is golden. Serve immediately.

Serves 1

 

Goat cheese is one of my favorite cheeses, so I definitely loved this sandwich. It is really creamy and the thyme adds just enough flavor. The mushrooms go well with the goat cheese. And so easy to make! It’s definitely a keeper!

P-S My hand mixer died yesterday. Any suggestions for a new one?

    Looks lovely!

    New mixer, well my Sister-in-Law got me a Black & Decker that has a ton of attachments that I've enjoyed these last few months. Even has a carrying case which was pretty fun.
