For today’s breakfast, I made something I thought about earlier this week but didn’t get to make. A perfect breakfast for when you feel like having something different but still healthy and energizing!
- 1/4 cup red and/or white dry quinoa
- 1/4 cup tropical or mango juice (I used Oasis Tropical Passion)
- 1/4 cup water
- 1 mango, peeled and cut in pieces
- 1 tsp goji berries
Directions: I a saucepan, combine quinoa, juice, water, goji berries and half of the mango pieces. Bring to a boil, reduce to low, cover and let simmer for 15 minutes. Add remaining mango, stir well and serve.
Makes 1 serving
This breakfast might make you feel like you’re in the tropics for 30 minutes ;-).
