After finishing the dough balls I made earlier this week, I decided to make regular cookies. For a while, I’ve been looking at the Oreo baking crumbs in my pantry that are waiting to be used. And last night, I finally decided to make something out of them!
Adaptation of Chocolate Chip Cookies, Novel Eats
Ingredients:
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup unrefined cane sugar + more to sprinkle on top
- 1/8 tsp fine sea salt
- 1/3 cup maple syrup
- 1/4 tsp molasses
- 1 1/2 tsp pure vanilla extract
- 1/2 cup safflower oil, divided
- 1/3 cup chocolate chips
- 1/3 cup Oreo baking crumbs + more to sprinkle on top
Directions: Preheat oven to 350°F and line baking sheet with parchment paper. Whisk dry ingredients (flour, baking power, baking soda, sugar, salt) together. In a second bowl, whisk syrup, molasses, vanilla and 1/4 cup oil. Add dry to wet and mix with a spoon until just combined. Add chocolate chips & baking crumbs and mix. At this point, it will look more like sand than dough.
Slowly add remaining 1/4 cup oil and mix. Make balls of dough (about 1 1/2 tbsp), place them on the baking sheet and flatten the top. Sprinkle with baking crumbs and sugar. Bake for 20 minutes and let cool on baking sheet for at least 10 minutes.
Makes 10-12 cookies
These are really crunchy without being hard. Nice change from moist chocolate chip cookies :).

Oreos are just beginning to appear in British supermarkets, so this is certainly a novel way of using them. I like 🙂

I haven't seen oreo crumbs, sounds like a great addition to a cookie! I love a good crunchy cookie, the kind you can dip in milk….yours sounds perfect for that!
