I studied all day. Mid terms are a week away!
And this means I needed an easy breakfast for crazy I need-to-study-now mornings.
I first thought about making muffins… Maybe a second batch of Can’t Add More Apple than that Muffins?
And then, I decided to make…
Adaptation of Fresh Apple Bread on Sweet Savory Planet
Ingredients:
- 3/8 cup unsweetened applesauce
- 2/3 cup & 1 tsp turbinado sugar, divided
- 1/2 tsp pure vanilla extract
- 1/4 tsp molasses
- 1/3 cup safflower oil
- 3 tbsp Homemade Pumpkin Butter, or apple butter
- 1 1/2 cups chopped apple (about 2 apples)
- 1 cup kamut flour
- 1/2 cup spelt flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp fine sea salt
- 1/4 cup chopped walnuts
- 1 tsp rolled oats & 1 tsp toasted wheat germ
Directions: Preheat oven to 350°F. Grease a 9″x5″ bread pan. In one bowl, mix flours, baking soda, baking powder, cinnamon and salt. In a second bowl, mix applesauce, 2/3 cup sugar, vanilla extract, molasses, safflower oil and pumpkin (or apple) butter. Add dry ingredients to wet ingredients and stir until almost completely mixed. The batter is very thick – it is fine!
Add apples and walnuts and stir. Pour batter in the bread pan and spread it if necessary. Sprinkle remaining turbinado sugar, oats and wheat germ on top.
Bake for 40-45 minutes, until a toothpick comes out clean.
Makes 1 bread.

oh… And I said I would make dinner for Diran and I today.
I made a nice tart.
That came out of the oven as a ricotta soup in phylo crust…
I’ll make it again… and I’ll remove all moisture from the tomatoes ;).
It was 7 pm when this thing was done…
