Big Day

Today is my first day of university! My first class is actually at 1 pm but there was a special breakfast to welcome the new students. The direction talked to us and there was muffins and fruits. I had an apple muffin (not really good) and a Granny Smith apple.

After the breakfast, I went to by a notebook and I also bought a bathroom rug. I had the great idea of buying a beige one in the beginning of summer. I walked on it with my shoes each time I came home and had to go to the bathroom… it is now more gray then beige. So I bought a nice green one!

 

I have every intention of taking off my shoes before walking on this one!

Lunch was Quinoa Tabbouleh:

It was really good! The flavors had time to blend overnight: definitely the king of dish to make the day before!

We are still in the middle of a heat wave in Montreal so I made so iced tea. I certainly won’t drink hot tea with this weather!

Iced Green Tea with Lime

Ingredients:

  • 1/2 cup loose leaf green tea
  • 60 oz water
  • 3 tbsp lime juice
  • About 1/8 cup maple syrup, or to taste

Directions: Bring water to boil in a large pot. Remove from heat and add tea leaves. After 5 minutes, transfer to a heat proof pitcher or an other pot, using a fine mesh strainer to remove the leaves. Let cool, then add lime juice and maple syrup and mix. Put in the fridge.
Don’t put the tea in the refrigerator before it is cool or it will get cloudy.

Makes 1 pitcher (60 oz)

So refreshing! Tastier AND healthier than Nestea ;).
